Cut corn kernels from the cob and place ½ of the kernels in a blender along with the coriander, onion, egg, flour, salt & baking powder. Blend until smooth, pour in to a bowl and add the remaining corn, mix.
Heat oil in a pan and when hot add spoonfuls of the mixture to the pan, cook for a few minutes on each side until the corn fritters are golden and crisp. Remove from the pan and rest on paper towel to absorb any excess oil. Serve with a sprinkle of fresh lemon juice and some extra coriander leaves.
