Rice Noodle Salad


150g Vermicelli Noodles
½ capsicum, finely sliced
4 green onions, finely sliced
1 carrot, grated
½ cup peas
½ cup bean shoots
¼ cup raw cashew nuts, roughly chopped
fresh mint leaves, roughly chopped
fresh coriander, roughly chopped
1 lemon, juiced
½ tsp sesame oil
¼ tsp raw sugar or honey

Place the vermicelli noodles in a bowl and cover with boiling water, leave for a few minutes until the noodles are soft then drain and rinse in cold water and drain thoroughly.
In a separate bowl combine all the other ingredients and stir to combine. Add the noodles and toss together. Serve with a sprinkle of fresh mint on top.
