Oriental Salad

Serves 4
½ chinese cabbage, finely sliced
1 carrot, grated
½ red onion, finely sliced
70g baby spinach
¼ cup pine nuts, toasted
¼ cup slivered almonds, toasted
½ cup fresh mint leaves, roughly chopped
¼ cup crispy noodles

Dressing
¼ lime, zest
½ lime, juice
25ml white wine vinegar (or apple cider vinegar)
2 tsp caster sugar
2 tbsp sesame oil

Mix all the dressing ingredients together in a bow and leave to one side. Mix cabbage, spinach, mint, carrot & onion in a large bowl. Pour over dressing and mix through. Sprinkle nuts and noodles on top and serve.
