Healthy Cooking Avocado Dip

Serves 6

1 large avocado

1 tbsp lime juice

½ long red chilli

3 tbsp chives, chopped (+ extra sprigs for serving)

3 tsp fresh mint, chopped

1 sour dough baguette, cut in to slices

Scope the avocado flesh out and place in a bowl with the lime juice, mash together with a fork, then mix in the chilli, chives, mint and a pinch of salt. Add a spoon full of the avocado mixture to each slice of sourdough and top with extra chive sprigs.

This dip also goes well with sweetcorn or zucchini fritters
